West Coast quesadillas to celebrate tonight’s AGA launch

when it is to be launched at a starry party in Los Angeles.

 

The event will be held at the home of the divine interior designer Kathryn M. Ireland and I thought a suitable recipe to mark the occasion would be these fabulously delicious Quesadillas. The lightly toasted tortillas, chillies and chicken are so very West Coast. I can’t wait for the party – now, which frock should I wear…

Quesadilla recipe

Quesadillas
This is a simple and versatile dish and the ingredients can be varied to suit your tastes. Great for a quick solo snack, informal entertaining, supper for the children or cut into pizza-style slices for a summer picnic. They are also a fantastic way of using up Sunday roast leftovers.

Ingredients (makes 4)
8 soft tortillas
250g (9oz) mature cheddar, grated
2 hot chillies, finely chopped
Bunch of spring onions, sliced
250g (9oz) cooked chicken, sliced

Method
Place a tortilla on a piece of Bake-O-Glide on the simmering plate and sprinkle a quarter of the cheese, chillies, spring onions and chicken over the tortilla base, then allow to toast lightly from underneath.

Place another tortilla on top and turn the whole ensemble over, so allowing the cheese to melt. Cook for another couple of minutes.

Remove from the simmering plate and cut into wedges using a sharp knife or pizza cutter. Repeat with the remaining tortillas and serve garnished with a side salad.

  1. Quesadillas are also good witha smear of mango chutney on the underside of top tortilla, to help stick everything together!
